Miser's Feast
A tasty variation on very old recipe
Ingredients
- 1 kg (2lb) potatoes, peeled and sliced
- 2 large onions, chopped
- 25 g (7 oz) butter
- 12 rashers of smoked Welsh bacon
- salt and pepper
Method
Boil the potatoes and onions in a saucepan in salted water. When cooked, mash them together with the butter. Transfer to an ovenproof dish and place the bacon rashers, with rind removed, on top of the mash mixture. Cook in the oven at gas mark 4, 175°C, 350°F until the bacon becomes crispy.
Serves four.
