Snowdon Pudding
Hearty, zesty comfort food
Ingredients
- 125g (4 oz) suet
- 3 eggs
- 25 g (1 oz) cornflour or ground rice
- 75 g (3 oz) demerara sugar
- 125 g (4 oz) breadcrumbs
- 50 g (2 oz) raisins
- 75 g (3 0z) lemon marmalade
- the zest of 1 lemon
- pinch of salt
Method
Mix the suet, breadcrumbs, cornflour and salt together. Add the lemon zest and the sugar and mix well. Grease the inside of a pudding basin and press half the raisins onto the greased surface. Beat the eggs with the lemon marmalade and add this and the remaining raisins to the suet mixture. Pour carefully into the basin.
Tightly cover the pudding basin and place in a large pot of hot water. Boil for approximately 1 hour and 30 minutes. Turn the pudding basin upside down on a large plate and the pudding should slip out. Serve hot with custard.
